Once the dough is ready, cover it with a cloth and lets it rest for 2 hours and 30 minutes.

Fish Curry with Tamarind Sauce

One kilogram of Deccan white carp, one tablespoon of turmeric and red chili powder each, vegetable oil, ¼ cup of tamarind paste, ¼ cup of oil, 1 cup of water, one onion (minced), one and ½ tablespoons of garlic paste, 4 to 5 green chilies, one tablespoon of coriander leaves, ¼ teaspoon of cumin seeds, one and ½ tablespoon of ground coriander, and salt to taste.
First, cut the fish into pieces and in a container, add vegetable oil, turmeric, salt, and chili powder and mix it with the fish. Marinate for 30 minutes.
Add the tamarind paste and water to the container. Extract the tamarind seeds.
In a frying pan, add ¼ cup of oil, cumin seeds, and onion. Cook it until the onion becomes light brown.
Add the garlic paste and the fish cook it for 7 to 10 minutes.
After 10 minutes, add the tamarind paste and boil it. Turn the fish pieces to cook and add salt, chili powder, green chilies, and coriander.
Cook it on a low flame for 15 minutes or until the gravy thickens. Garnish it with coriander leaves.
Cinnamon Coffee Kulfi

For kachumber, one cucumber, carrots, green pepper, onion, and tomato each, ½ lime juice, salt, and coriander.
For kachumber, mix all the vegetables and add salt, lime juice, and coriander. That’s it. Your kachumber is ready.
Heat the microvan at 200°. Bake the sweet potatoes for 40 to 45 minutes.
Add the sweet potatoes, chili, pepper, coriander, ginger, corn flour, and cumin in a bowl and mash it. Mix it well and cut then into 10 to 15 pieces.
Dip them in breadcrumbs and freeze for 30 minutes.
Now in a pan, add one tablespoon of oil and fry the cakes for 4 to 5 minutes or until they are light golden brown.
Serve the sweet potato cakes with kachumber.
Creamy Broccoli Gravy

Three cups of broccoli (thinly sliced), one minced garlic clove, three tablespoons of butter (unsalted), five potatoes (thinly sliced), one tablespoon of thyme leaves, one and ½ cup of heavy cream, 2 cups of Gruyere (grated), ½ teaspoon if nutmeg, ½ teaspoon of black pepper, and salt to taste.
Preheat the oven to 300°. Apply butter to the baking dish.
In a frying pan, melt the butter. Add the garlic and cook for 45 seconds.
Now add the broccoli, thyme, potatoes, nutmeg, pepper, salt, and heavy cream.
Boil it in a medium flame. Make sure the potatoes absorb the heavy cream, and the gravy is thick. Cook it for 2 to 3 minutes.
Please remove it from the pan and stir in a bowl of Gruyere.
Now transfer this to the baking dish. Shake it so that the broccoli and potatoes are distributed evenly. Add the remaining Gruyere.
Cover it with aluminum foil and bake it for 40 minutes or until the potatoes are tender.
Uncover it and bake it for another 10 minutes.
