Thanks for posting this link – I’ve been wanting to make goat cheese truffles, but have been scared of using the wrong ratio and ruining perfectly good goat cheese AND awesome chocolate.
Now to find the ultimate chocolate-goat cheese pairing. This will take a lot of investigative work.
